Spiced 'n Savory Candied Walnuts

Salty, sweet with a good kick of spice! Preheat oven to 300 degrees Celsius.
Separate the yolk from the egg white. (Save the yolk for another recipe, like lemon curd!)
Whisk the egg whites
Whisk until you have a loose meringue texture
Add in your desired amount of brown sugar
S&P to taste
I added some brushed dried rosemary
Nutmeg and cinnamon
& the zest of an orange.
Take just the orange zest and not the pith (white part of the skin)!
Add it all into your whipped egg whites
Combine until it's all combined.
Walnuts. I get mine from Costco in a large bag! Yum.
Toss a couple handfuls in
Stir to evenly coat.
Pour all of it onto a pan, lined with a slightly greased piece of foil. (I used butter)
One layer.
For some extra crunch, raw sugar.
Sprinkle generously on top and pop the tray into the oven for about 30 minutes, stirring once after 15 minutes.
Keep an eye on them! Once they're nice and golden, and not gooey to the touch, pull the tray out, remove foil/walnuts and allow to cool.
If you make these, I guarantee that your house will smell divine. That is...if you don't burn them...and I have. Once, they were almonds and they looked like giant tar like raisins. Boo! Once you've taken the pan out of the oven I'm warning you: do not to eat them right away. Resist! These buttery, crunchy, sweet, salty and spicy little things will burn your mouth and it'll hurt. Trust me on this one! This is a general recipe, you can add whatever spices you want and candy whichever nuts you desire. It's hard to mess up. I've made these lots of times now and each time I change it up a little bit. Keeps my taste buds on their...toes! I like adding these gems to salads, chopped and sprinkled on sprouts or asparagus, in cereal, oatmeal, crush them and use it to make a yummy crust on meat or fish...or just eat them alone. Addictive! :)
