Another throw together dinner consisting of rice noodles tossed in a spicy peanut and sesame sauce (vegan) and served with sautéed zucchinis and...Janes breaded chicken fingers! As far as frozen chicken pieces go, Janes' is my favourite. The breading is seasoned well and it's made of 100% chicken breast, not random grey mush. They're worth the extra couple of bucks!
The sauce for the noodles is super easy to make. Peanut butter, tahini (optional), sesame oil, soy sauce, chili paste or chilies in oil, granulated garlic and water or broth to thin it out. Sautée some onions and or garlic if you're feeling fancy, heat it all up and pour over noodles of your choice. It's one of my (and Rich's) favourite sauces, ever.
