Rich and I will never get bored of making pizza and eating it. Even as a child I swore that I could live off of pizza alone and I'm pretty sure you can! It's basically got all your food groups and is relatively healthy depending on your toppings. Win win!
For this particular pizza night we used: pepperoni (vegan and regular), mushrooms, green peppers, onions, yellow and red cherry tomatoes from the garden, left over roast chicken (for me) and hot peppers (for him). We both used tomato sauce as a base and because I didn't have cheese (rather, I didn't feel like spending $7 on cheese), I made a white sauce with a bit of Parmesan. Totally delicious. I mashed up an avocado, added some s&p, and a touch of lemon to dip our crusts in. Favourite!
Appetizer! While the pizzas were off in the super hot oven baking, Rich sauteed the rest of the mushrooms with a little v.butter and garlic. We ate them on Wheat Thin crackers with a smidgen of hummus. So good! WH-eat thins. WHHHHHHEAT THINS!
Well, since the oven was on and I had picked up a good sized eggplant for a mere 25¢ and Richard had been asking for breaded eggplants (kind of like vegan eggplant Parmesan, without..the parm and cheese, obviously.) I decided it was a perfect time to finally make it. I dipped them in flour then in plain soy milk and finally seasoned bread crumbs. After about 10 minutes in the oven, at 450F we ate them up with hot marinara sauce. We were STUFFED but the end of dinner and I had enough pizza left over for another three meals, which I portioned and stuck in the freezer. We both had a tonne left over! :)
