A healthy soup and sandwich dinner to savor inside, while the snow storm passes and does it's thing. This isn't just any sandwich and this isn't just any kind of soup though!
Spicy tomato soup made from scratch using tinned tomatoes, already seasoned thanks to Almer Accents Tomatoes. After sautéing some onions and garlic, I added the tomatoes and some broth (chicken, you can use vegetable). I blended the heck out of it, let it simmer on low and garnished it with a touch of sour cream. It was smooth, velvety and had a good chili pepper kick to it!
To accompany my soup, I made steak sandwiches with balsamic caramelized onions, shredded lettuce and a good smear of extra thick sour cream (Gay Lea Gold Premium). I love the combination of balsamic vinegar and sour cream!
The striploin steak was lightly seasoned with sea salt and black pepper, quick grilled (George Foreman), cooled and sliced. I chopped up four medium sized yellow onions, added some butter to my pan, cooked on medium until browned then added a good splash of balsamic. Salt and peppered, added a little sugar to balance the flavours out.
This sandwich needed a good bread and this was perfect. Purchased in a bag of 18 for about $6 from Costco, these (multi/whole) grain buns are great. They're just hefty enough to carry the weight of all the sandwich innards, yet they're still fluffy inside. Not to mention they toast nicely as well if you want a crispy crunchy exterior and who doesn't? :)
We rarely have sandwiches for dinner- so this was a bit of a change. Definitely a welcomed one, because they're super easy to make, filling, inexpensive and can be made ahead of time!
