I've gotta tell you, this was one of the most delicious late lunches I've had in a while! As someone who loves salmon (all ways) and avocado- this was flavour and texture heaven coming from a savory point of view. The creaminess of the fresh mashed avocado accented with a squeeze of lemon, combined with the saltiness and smoke of the salmon on earthy whole grain "toast points"...I could eat this every day!!
I added a little sprinkling of spring onions to add a little bite along with a pinch or two of black pepper. I supposed I could have added red onion slices instead, but I used what I saw first in the fridge.
I wish I had this in front of me now. There would be crumbs and smears all over my desk and keyboard, but I wouldn't care!
