I spent a little more time than usual prepping this meal and I blame it all on the green beans. They might be tasty and good for you, but when you buy them fresh and not frozen, it ends up being a huge pain lopping/pinching the stems off! Rarely do I find this task relaxing. I find doing laundry relaxing, but not this.
In continuation of my love for limes, I marinated strip loin steaks in a combination of lime juice, chili powder, chili flakes, garlic, honey and black pepper. After an hour at room temperature, they were grilled in a pan on med/high to medium rare and served with a bed of coconut rice and a sauce pack full of chopped cilantro and yes, you guess it-lime juice all mixed into some olive oil mayonnaise. I also added a dollop of honey to balance the flavours out, but as always, these non-recipes are just a starting off point. You could add whatever you and your taste buds fancy!

Those were cooked in a steel wok, on high with a bit of oil (I used grape seed oil for it's higher smoke point) just enough water (a couple splashes and a lid) to create steam for them to cook through. The water then evaporates, leaving you to cook with a dry pan. Salt to taste and just leave the beans alone. Don't mess with them by stirring them like a witch over a cauldron. After a couple minutes, you'll see the ones on the bottom gain some colour and flavour- that's when you stir and repeat until you've got all the charred goodness you want. :)
