I don't follow a recipe anymore (do I ever?). Everything is done approximately. If the marinade tastes good before it gets added to the meat, then it's good to go! Just cook the cubes of pork in a large pan on medium high, with a little bit of oil. Brown all sides and make sure it's cooked in the middle before serving and voila!
Rice and beans couldn't be easier. I make mine in a rice cooker and it's just a matter of dumping all the ingredients in the pot.
For every one cup of (thoroughly washed) rice add...
- Half a can of full fat coconut milk (stirred to combine the cream and water)
- 2 tsp chicken boullion
- 1/2 tsp granulated garlic
- 1/2 tsp granulated onion
- A pinch each of salt and black pepper
- 1 tsp dried thyme leaves
- and a can of black or kidney beans (I use what I have)
**It takes 1.5 cups of water to cook 1 cup of rice according to the instructions on my bag. Keep in mind that the recipe already includes 1/2 cup of coconut milk, so adjust the liquids accordingly. I usually add another generous cup of water in addition to the coconut milk.**
