Rich's Vegan Birthday Donuts


Somebody turned the big four-zero in July and got mini donuts along with presents and a cake

But never mind the other stuff, lets talk about the donuts. Apparently the last time he even had a donut was over 20 years ago. Crazy, right?! The last time I had a donut was like...well, shit I don't even remember. But it wasn't twenty years ago, that's for sure. Haha, being donut-less since the age of six? Yeah right! Anyway, sure there are vegan bakeries/shops that probably do make egg-free/diary-free/organic/sugar-free/gluten-free, possibly even baked donuts, but we've never had them. I made my own, though they're dairy and egg free and deep fried. That's good enough for Rich's vegan standards!

*I used ground flax seeds as an egg re-placer in this batch, but I would recommend using a starch based egg re-placer instead to cut some of the chew.



These are the ugly scrap bits. They tasted good, but looked pretty hideous. I fried them up, put them in a paper bag, added cinnamon and sugar then shook them all up. I didn't use powdered sugar, but rather granulated sugar that I buzzed in the Magic Bullet.  The texture's better that way, I think!


I couldn't stop munching on these! But then I remembered donuts have holes and went on to those. See below. Are those cute, or what?! Yeah, I ate like, all of them.

Sorry for the not-so-awesome photo of what they look like done. It was dark by the time I iced them.  Some of them were glazed in chocolate, some with vanilla and sprinkles and a few with maple and stuffed with vanilla cream (not shown). All in all there must have been at least forty mini donuts. Perfect.


Although I'm not a huge fan of frying food in the house, if I ever do make them again I promise to take better photos. The chocolate glazed were our favourites, with vanilla sprinkles a close second. The maple was good too, but I personally miss non-vegan custard! Rich liked them though :D
