Lazy Girl Chicken Spaghetti

Here's another Lazy Girl Dinner "recipe". It's made in a single pot (okay- two pots including the one used to boil water for the pasta), there are minimal dishes to clean up and you basically shove it in the oven and wait 45 minutes. What you decide to do in those minutes is up to you, but in my case I chose to edit photos and blog.

The chicken breasts have no chance of drying out since it's cooked in the sauce, which in turn infuses it with deliciousness. If you can turn an oven on and boil water, this recipe is for you- even if there aren't any measurements or real precise directions. Just look at the pictures!

Start off by dicing a medium onion into small bits. If you don't like onions, omit it or use less.



You'll also need a jar of tomato sauce, skinless/boneless chicken breasts, spaghetti and a nice large casserole dish with a lid. I lined mine with foil, because no one wants to scrub baked in, crusty sauce. 
Just pick up and toss once you're done and voila, no soaking, no scrubbing. You're welcome.
Plus, I just did my nails.

Pour the sauce, add the chicken, diced onions and whatever spices that make your taste buds happy. I happen to like garlic, black pepper, oregano and basil. I used the dried stuff and that's okay!

Salt (if needed) at the end, once the chicken is cooked.

Preheat your oven to 400F.

This is what it'll look like. A giant mess that you might be tempted to taste, but refrain as there is raw poultry and your body won't take kindly to it. 

 Tip: If there's sauce stiff left in the bottle, add a bit of water in to it and swish it around to get it all out! Pour it in the sauce mixture.


Cover it up with a lid and bake. I didn't get a photo, but add a piece of parchment or foil on top before putting the lid on. Again, this aids in the clean up process at the end as there is a high possibility of the sauce splattering. 

I love foil.

Into the oven it goes, 400F for about 45 minutes.

If you happen to forget about it for a bit longer, it'll be fine. I know from experience! Taste and salt the sauce if needed. Sometimes sauces need sugar to balance things out- add that too if you so wish.

Now's the time to get that pot of water boiling. Follow the instructions on the box of spaghetti. 

I think spaghetti may be my favourite type of pasta. I used Catelli Smart, which apparently has the benefit of fiber. It's healthier than regular semolina pasta, but the real reason to why I used this was because it was in the pantry, two steps away from where I was standing and it was free. :)

I added a glug of olive oil to the cooked pasta to keep it from sticking.

Slice the chicken, add sauce to the spaghetti and BAM. Lazy Girl Dinner on a pretty plate.





I should also add that I made this at like, 3pm in the afternoon. There was no way I was going to make dinner during hockey night...although I probably could have prepped and put it in the oven just before the game started, made the pasta during first intermission and had dinner ready by the beginning of second intermission. 

But then I wouldn't have been able to take awesome day light photos. I love natural light.
Good thing this reheats really well. Left overs anybody?
