As I was browsing for chickpea seitan recipes online, I happened to stumble across a recipe for vegan marshmallow fluff. It looked promising and the ingredient list was pretty simple. I also happen to have 30 cans of beans at home (who can say no to free things?!), so any excuse to bust one open is always welcome.
The ingredients included chickpea brine (from a can, I use the no salt added variety), guar gum, sugar and vanilla. I mixed it all up in the Kitchen Aid and in about 8 minutes, there it was. Fluffy, thick and gooey spreadable marshmallow!
The recipe is good, but I found that it had a faint taste of chickpea. Totally understandable. To mask the taste, I added a couple tablespoons of cocoa powder and holy moley, delicious.
I know for sure this is going to be an ongoing experiment for me, as there are endless things one could use/do/make with this whipped fluffiness.Macarons, meringue cookies, meringue topping, solid marshmallows, s'mores, all sorts of amazingness!
Did I mention I'm not even vegan? I love a challenge and guess who gets to be my guinea pig? :)
