|I'm warning you, these are addictive. Line two baking trays with foil then with parchment paper (this will aid in cleanup. Trust me!). Spread out a single layer of matzo on the trays, breaking pieces to fit. Preheat oven to 350F.|
|A stick of butter + a cup of brown sugar. Let melt and bring to a boil, stirring constantly. Remove from heat, add a teaspoon of vanilla.|
|Drizzle the caramel over the matzo. I decided to use more matzo than caramel, so that the end result wouldn't be tooth achingly sweet. Put your trays in the oven for about 10 minuteswatching carefully so it doesn't burn. Turn the oven off.|
|Chop up some chocolate, you can use light or dark or even use chocolate chips. Have about 1.5 cups.|
|Remove the trays from the oven and immediately sprinkle your chocolate on top.|
|With your oven off, put the trays back in for about 5 minutes. This will allow the chocolate chunks to melt and settle. When you take it out, you can either spread the chocolate out with a spatula or just leave it. I left it for a more rustic look.|
You might want to make a double batch as these are ridiculously addictive. To make it super fancy, add almond slivers, chopped pistachios or hazelnuts! Dried fruit maybe? Make it. It's SO GOOD.
If you don't do Passover or don't have matzo, you have no excuse not to make this, because it's just as good made with soda crackers/saltines!! I'm pretty sure it would be good made with a piece of bread or bagel. Go, go make it NOW.
