It was one of those, too lazy to think of what to make for dinner days.
I rummaged around the fridge and freezer and found all the components I needed to construct a relatively fast and not all that horrible for you chicken burger. In the refridgerator, I found a pretzel bun, a quarter of a head of iceberg lettuce, half a tomato, a chunk of red onion and kale pesto that I had made a day before. In the freezer, near the back and under a pile of other goodies, sat a baggy full of Jane's chicken fingers yearning to be found.
I toasted the bun and slapped everything together. After baking the chicken, I felt a little more enthusiastic about dinner and even mustered up enough energy to shred my lettuce! Over all, a scrumptious meal with little dishes to wash and minimal clean up. Perfect.
