I'm trying to work more yogurt into my diet. I'm not a huge fan of milk and I (sadly) don't eat as much cheese as I use to, so I'm trying out this yogurt thing to get some more calcium in along side my greens and what have you. I recently picked up a free tub of Activia, unsweetened to make a cucumber and cilantro sauce, but instead of savory, I felt like using it for something more on the sweet side. What better than to make a yummy parfait!
I started by making a simple granola.
Toasted oats, shredded sweetened coconut, white sesame seeds and crushed peanuts.
Then all of this!
Fresh nectarine pieces and crushed dehydrated raspberries (made by my food dehydrator a while back.)
A couple tablespoons of yummy granola and a generous drizzle of local honey that I picked up at the farmers market in St. Jacob's. I cut a little mint from the garden and added that too.
What a perfect little snack! I'm going to have to make these more often and if I do, I think I might just have to try my hand at making yogurt at home. Dun, dun, dun...
